Abstract

The E.A. Martin Program in Human Nutrition advances nutrition knowledge through research and educational programs. This collection is composed mainly of records pertaining to the development of the Ethel Austin Martin Program in Human Nutrition. Included are records related to the Endowed Chair, the Distinguished Lecturer and Visiting Professorship in Human Nutrition and collected publications related to nutrition. Also included are the Ethel Austin Martin Papers which are comp composed of articles and books by Ethel Austin Martin, transcripts, correspondence, ephemera, awards, and photographs.

Historical Note

Dr. Ethel Austin Martin graduated from SDSU in 1916 and went on to do graduate work at Columbia University and the University of Chicago. She taught at several institutions before joining the National Dairy Council in 1929, where she served as Director of Nutrition Services until her retirement. Dr. Martin was a distinguished nutritionist who was instrumental in developing research grant programs, instituting nutrition conferences, founding journals, and writing several nutrition textbooks.

Before her death in 1993 at age 100, she established an endowment at South Dakota State University with the ultimate objective of providing for a permanent professorship to ensure continuing high-level instruction in the science of nutrition. Dr. Martin's goal was realized in 1997, when the Ethel Austin Martin Chair in Human Nutrition was established and subsequently filled by Dr. Bonny Specker.

The purpose of the Ethel Austin Martin Program in Human Nutrition is to advance knowledge in the science of human nutrition through a multidisciplinary approach, to encourage practical applications in improving human health, and to offer professional enrichment in nutrition for all students, faculty and staff at SDSU. The advancement of knowledge in the science of human nutrition is takes place through both research and educational programs using a multidisciplinary approach.

The E.A. Martin Program advances nutrition knowledge with these campus activities:

  • Active research projects both within the program, as well as collaborative efforts with other investigators from SDSU and the region.
  • Financial support for pilot projects is provided to faculty at SDSU who propose collaborative nutrition projects that utilize a multidisciplinary approach.
  • Educational programs such as formal courses, as well as support for invited seminar speakers. The annual E.A. Martin Distinguished Lecture in Human Nutrition has been a long standing tradition at SDSU, bringing in world-renowned speakers in the field of human nutrition.

Ethel Austin Martin

Ethel Austin was born July 14, 1893, in Storm Lake, Iowa to George and Evaline Austin. Her family moved to Brookings, South Dakota in 1902. She attended grade school and high school in Brookings. She graduated from South Dakota State College in Brookings in 1916. She received a second bachelor's degree (1919) and a master's degree from Columbia University in New York (1923). In 1955, she received an honorary doctor of science degree from South Dakota State College.

After graduation from South Dakota State College in 1916 Ethel taught high school at Faulkton, South Dakota from 1916 to 1918. Over a period of years, she taught home economics and nutrition at Texas State College, the University of Illinois, Urbana (1923-1924), the University of Chicago (1925-1929), and was Visiting Associate Professor at Northwestern University (1957-1959). From 1929 until 1951, she was the director of nutrition services for the National Dairy Council, where she had the opportunity to start the organization's research program and initiate nutrition education publications. After her retirement, she turned to writing. In addition to numerous technical publications, she authored three university-level textbooks in nutrition including a revision of "Robert's Nutrition Work with Children," "Nutrition in Action," and "Nutrition Education in Action."

She was one of ten U.S. delegates appointed by the State Department to the 11th International Dairy Congress in Stockholm, Sweden, in 1949. She was the only woman delegate to the entire Congress. She was appointed to the USDA's Food and Nutrition Advisory Committee between 1950 and 1960.

She served as president and board member for the Chicago Nutrition Association and she was a member of the Advisory Committee to the Nutrition section of the Chicago Board of Health. She was awarded the title Fellow of the Society for Nutrition Education on her 99th birthday.

During of her life, Martin devoted herself to planning, guiding and consulting on the Ethel Austin Margin Chair of Human Nutrition at South Dakota State University. In preparation for the chair professorship, she and her husband established an endowment fund to support an ongoing program of visiting professorships and distinguished lectureships in human nutrition. Her vision was to generate an understanding of the importance of nutrition to all pertinent disciplines of the university.

She married Dr. Edward Moss Martin in 1924. Dr. Martin was a former director of public affairs for the Union League Club of Chicago and led efforts to promote civic and judicial reform in Illinois. Edward Martin died in 1985. Ethel Austin Martin died, Saturday, September 11, 1993 in Chicago, Illinois.

Series 1. Endowed Chair records [UA 24.0].

This series is composed mainly of records pertaining to the development of the Ethel Austin Martin Program in Human Nutrition, the Endowed Chair, and the Basic Course in Nutrition. Also included are financial files, progress reports, records related to the Ethel Austin Martin buildings, the Human Nutrition Committee files, newsletters, and the memorandum of agreement with Ethel Austin Martin and the signing ceremony of the agreement. The records pertaining to the development of the program and the Endowed Chair are composed of working papers created by Ethel Austin Martin as well as South Dakota State University. These materials consist mainly of correspondence, notes, collected research, statements, and position papers. The material related to the Basic Course in Nutrition consists of records related to the creation of the course and include items such as research in creating the course, textbook selection, course material, and syllabi. The files related to the memorandum of agreement with Ethel Austin Martin are composed of the agreement, correspondence, and material dealing with infringement on the agreement, most likely gathered by Ethel Austin Martin herself. Also included is material pertaining to the signing of the agreement in 1985.

Series 2. Ethel Austin Martin papers [UA 24.1].

This series is composed of articles and books by Ethel Austin Martin, transcripts, correspondence, ephemera, awards, and photographs. The articles include publications created by Ethel Austin Martin during her time as director of nutrition services for the National Dairy Council. The books include a copy of the various editions and reprints for "Nutrition in Action" and "Roberts' Nutrition Work with Children," which also includes a galley proof. The transcripts are from an interview conducted by John E. Miller in 1989. These are Martin's reminiscences of her time growing up in Brookings and Bruce, South Dakota as well as her time at South Dakota Agricultural College. Topics about the college include Presidents, Hobo Day, Literary Societies, campus buildings, campus activities, sports, buildings, and individuals she had contact with, including Hubert Mathieu, Hubert Mathew, and N.E. Hansen, among others. Other topics include memories of her career, research, and family. The audio cassettes for these transcripts were not included with this donation.

There is a fairly large amount of correspondence included with this collection. Most of this is between Ethel Austin Martin and South Dakota State University officials and pertain to the establishment of the Ethel Austin Martin Program in Human Nutrition. Also included is correspondence from friends and associates on the occasion of Ethel Austin Martin's 100th birthday, and letters pertaining to professional appointments. Also found in this collection is material related to her education; such as grade reports from elementary school to college, diplomas, and a teaching certificate, awards presented to Martin, and material related to her marriage to Edward Martin; such as their marriage license, photographs, and a memory book. Also included is ephemera related to her life in college including club membership pins, a college graduation pin from 1916, calling cards, and a blanket worn by Ethel Austin Martin during first Hobo Day parade at South Dakota State College in 1912. The photographs include images of Martin's marriage, her youth, her retirement from the National Dairy Council, and the signing ceremony of the memorandum of agreement with South Dakota State University establishing the endowment for the Program in Human Nutrition.

Series 3. Distinguished Lecturer in Human Nutrition records [UA 24.2].

Dr. Ethel Austin Martin, 1916 alumna of South Dakota State University, established an endowment fund to promote multidisciplinary scholarship and education in the field of human nutrition. This fund provides for a series of Distinguished Lectureships in Human Nutrition. The Distinguished lecturers in Human Nutrition are on the South Dakota State University campus for a two-day period. They give a major presentation open to the general public, followed by exploratory discussions of the functions of the program in different educational areas of the University.

This series is composed of files related to the planning and development of the Ethel Austin Martin Distinguished Lecturer in Human Nutrition. Included are files on program planning and development, publicity, programs and announcements, audio recordings of some lectures and material related to the selection of lecturers. Folders consist of correspondence, clippings, photographs, and speech files, including research. Ethel Austin Martin was very involved in the planning of the lectureships. Researchers will find many letters, notes, and related material created by Martin in these files.

Series 4. Visiting Professorship in Human Nutrition records [UA 24.3].

The concept of the Ethel Austin Martin Visiting Professorship at South Dakota State University is al all campus effort to encourage and advance learning in the science of human nutrition and its application. It represents a unique approach to human nutrition through the active cooperation of faculty and students from all pertinent disciplines at the university. Advances planning and preparation in cooperation with the visiting professor in inherent in the concept. Each visiting professor is selected because of his/her excellence in a specific area of nutrition. The visiting professor provides direction and guidance to campus participants and serves as special lecturer on campus and in the community.

The Visiting Professorship program is implemented as a grass roots effort by task force committees, each group consisting of faculty members who represent different subject areas that can contribute to the understanding of a nutritional problem. Prior to the symposium, task force groups assemble data and prepare presentations intended to stimulate questions and promote discussion. These cooperative relationships create a cross-fertilization of expertise among the various subject areas which enhances their separate contributions and broadens immeasurable the dimensions of human nutrition.

The Nutrition Fund Committee, appointed by the President of South Dakota State University, is responsible for the implementation of the Visiting Professorship program. The members represent different disciplines that impact upon human nutrition and are rotated on a specific basis.

The Ethel Austin Martin Visiting Professorship is funded by a gift from Ethel Austin Martin, a 1916 Home Economics graduate of South Dakota State University. She received as advanced degree in nutrition at Columbia University, New York, and did additional graduate work at the University of Chicago. Dr. Martin was Director of Nutrition Services of the National Dairy Council for 22 years. She has authored several textbooks on nutrition, including the well-known textbook, "Nutrition in Action."

This series is composed of files related to the planning and development of the Ethel Austin Martin Visiting Professorship in Human Nutrition. Included are files on program planning and development, publicity, proceeding, programs, evaluation of the conference, audio and video recordings of some sessions and material related to the selection of the visiting professor. Folders consist of correspondence, clippings, and photographs. Ethel Austin Martin was very involved in the planning of the lectureships. Researchers will find many letters, notes, and related material created by Martin in these files.

Series 5. Collected publications in Human Nutrition [UA 24.4].

This series is composed of publications related to human nutrition collected by Ethel Austin Martin and the Ethel Austin Martin Program in Human Nutrition. These were most likely collected in preparation for the Basic Course in Human Nutrition. Folders consist of journal articles, books, newsletters, and proceedings.

Conditions Governing Access

This collection is open to researchers without restrictions. The materials in the Archives do not circulate and may be used in-house only.

Researchers conducting extensive research are asked to make an advance appointment to access archival material. Please call or e-mail prior to visiting the collection and indicate as much detail as possible about a particular topic and intended use.

South Dakota State University supports access to the materials, published and unpublished, in its collections. Nonetheless, access to some items may be restricted as a result of their fragile condition or by contractual agreements with donors.

Copyright note

Copyright restrictions apply in different ways to different materials. Many of the documents and other historical materials in the Archives are in the public domain and may be reproduced and used in any way. There are other materials in the Archive carrying a copyright interest and must be used according to the provisions of Title 17 of the U.S. Code. The Archive issues a warning concerning copyright restrictions to every researcher who requests copies of documents. Although the copyright law is under constant redefinition in the courts, it is ultimately the responsibility of the researcher to properly use copyrighted material.
